INGREDIENTS:

  • 1 oz cocoa powder
  • 2 oz potato flour
  • 2 oz rice flour
  • 1 oz gram flour
  • 1 oz ground almonds
  • 3 oz granulated sugar
  • 3 oz hard margarine or butter
  • 1 egg

STEP BY STEP:

  1. Mix all the dry ingredients together
  2. Beat the egg before adding with the butter and mix together until a soft dough is produced that sticks into a large ball
  3. Break the dough into walnut-sized pieces and place on a greased tray or nonstick baking parchment
  4. Flatten each lump with the back of a fork dipped in cold water
  5. Preheated oven gas mark 4 350 degrees F. Bake for 12 - 15 minutes. Cool on a wire rack.

TIPS:

Variations: Add chopped nuts or crystallized ginger
