Creamed Corn Bread

INGREDIENTS:

  • 1 cup cornmeal
  • 1/2 cup whole wheat flour
  • 1 tbsp baking powder
  • 1-3 tbsp sugar
  • 1/2 tsp salt
  • 1/3 cup applesauce
  • 3/4 cup skim milk
  • 15 oz creamed corn, optional
  • 2 egg whites

STEP BY STEP:

  1. Preheat oven to 425 degrees. Lightly spray an 8" by 8" cake pan (or equivalent iron skillet or other oven-proof pan) with vegetable oil and put into the oven to preheat
  2. Mix all ingredients together in a large bowl, pour batter into heated pan and bake for 20 minutes.
