INGREDIENTS:
- 2 cup fresh ripe strawberries
- 1 cup all purpose flour
- 3/4 cup whole wheat pastry flour
- 1 tsp baking soda
- 1 tsp salt
- 1/4 tsp baking powder
- 1/2 cup sugar
- 2/3 cup mashed ripe banana
- 2 egg whites, lightly beaten until frosthy
- 1/3 cup water
STEP BY STEP:
- Crush half the strawberries in a saucepan, and simmer over medium heat 2 minutes, stirring constantly
- Slice rest of strawberries and mix with the cooked berries. Chill
- Preheat oven to 350°. In a medium bowl combine all dry ingredients except the sugar. In a larger bowl mash the banana
- Mix the sugar in. Mix the egg whites and water in. Add flour mixture to wet ingredients. Blend well. Add strawberries and pour into a nonstick bread such as a 8.5x4.5-inch pan
- Bake for 40 minutes to 1 hour or until toothpick inserted in center comes out clean. Cool for about 10 minutes and gently pry off the sides and turn out onto racks to cool.
