Coconut Pecan Frosting

INGREDIENTS:

  • 1 1/3 cup flaked coconut
  • 1/2 cup margarine or butter
  • 1 cup sugar
  • 1 cup evaporated milk
  • 1 cup chopped pecans
  • 1 tsp vanilla
  • 3 egg yolks

    Buttercream Icing (3 1/2 cups):

  • 2-3 tbsp milk
  • 1 1/2 tsp clear vanilla
  • 1/2 cup shortening
  • 1/2 cup margarine
  • 5 cup confectioners sugar

STEP BY STEP:

  1. Mix sugar, butter, milk, vanilla and egg yolks in saucepan
  2. Cook over med heat, stirring occasionally, until thick, about 12 minutes
  3. Stir in coconut and pecans. Beat until spreading consistency.
  4. Prepare the cream butter and shortening then add vanilla. Add sugar a cup at a time beating on medium speed. Add milk 1 tbsp at a time and beat on high until fluffy.

TIPS:

To cut the sweetness I usually add about 1/4 tsp. of salt dissolved in the vanilla.
