INGREDIENTS:

  • 1 1/3 cup sweetened coconut
  • 1/2 cup butter
  • 1 cup of evaporated milk
  • 1 cup sugar
  • 1 cup chopped pecans
  • 1 tsp vanilla
  • 3 beaten egg yolks

STEP BY STEP:

  1. Mix all ingredients except coconut and pecans in a medium saucepan and cook over low heat until mixture thickens, about 10 - 12 minutes.
  2. Stir in coconut and pecans. Cool before frosting cake. Refrigerate until ready to eat.
