INGREDIENTS:
- 1 1/3 cup sweetened coconut
- 1/2 cup butter
- 1 cup of evaporated milk
- 1 cup sugar
- 1 cup chopped pecans
- 1 tsp vanilla
- 3 beaten egg yolks
STEP BY STEP:
- Mix all ingredients except coconut and pecans in a medium saucepan and cook over low heat until mixture thickens, about 10 - 12 minutes.
- Stir in coconut and pecans. Cool before frosting cake. Refrigerate until ready to eat.
