INGREDIENTS:
- 1/4 cup unsalted butter
- 3/4 cup milk
- 3 tbsp milk
- 1 large egg, beaten
- 1 cup flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup raspberries
- 1/2 cup chopped semi-sweet chocolate
STEP BY STEP:
- In a saucepan over low heat, melt 2 tablespoons of the butter
- Stir in the milk and heat until warm. Remove pan from heat
- Whisk together the flour, baking powder, and salt in a bowl. Stir in the egg and warm milk
- Fold in raspberries and chocolate. Melt 1 tablespoon of the butter in a griddle
- Place 1/4 cup of the pancake batter on the griddle. Cook until bubbles appear on the surface and bottom is golden brown
- Flip and cook on other side. Repeat with remaining batter, keeping
cooked pancakes warm in a 200F oven.
