INGREDIENTS:

  • 1 cup sorghum flour
  • 1/2 cup sorghum blend
  • 1 1/2 tbsp sugar
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tbsp oil
  • 1 cup milk
  • 1 tbsp lemon juice
  • 1 egg

STEP BY STEP:

  1. In bowl mix: Sorghum flour, sorghum blend, sugar, xanthan gum, baking powder, baking soda, salt
  2. In another bowl: Beat egg, oil, milk, lemon juice
  3. Mix egg mixture into dry mixture. Make sure your pancake grill is nice and hot before you pour your batter on the grill. They will be flat if you don't heat your grill enough.

TIPS:

Try to make the sorghum like this: Blend 2 cups sorghum, 2/3 cup arrow root, 1/3 cup tapioca.
