INGREDIENTS:

  • 1/2 cup pecans -- chopped
  • 1 cup sugar
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 3 egg whites -- beaten stiff
  • 20 crackers (coarsley broken)

STEP BY STEP:

  1. Beat egg whites until stiff; add baking powder and beat more.
  2. Add sugar and vanilla; beat again. Fold in crackers and pecans.
  3. Put in buttered pie plate and bake at 300 degrees for 30 minutes.
  4. Let cool and top with Cool Whip and chopped pecans. Randy Rigg
