INGREDIENTS:
- 1/2 cup olive oil
- 2 tbsp fresh lime juice
- 3 tbsp orange juice
- 2 cloves garlic, minced
- 1 tbsp chopped fresh cilantro
- 1/4 tsp hot pepper sauce
- 6 boneless chicken breast halves
- 1 tsp freshly ground black pepper
Nectarine Salsa:
- 3 ripe nectarines, peeled, pitted, and chopped
- 4 tbsp finely chopped green onion
- 1 jalapeno, finely chopped, including some seeds for heat
- 1/4 cup finely chopped red pepper
- 2 tbsp finely chopped basil
- 2 tbsp fresh lime juice
- 1/4 tsp chile powder
- salt and pepper to taste
STEP BY STEP:
- Make the marinade by mixing the first 6 ingredients
- Marinate it in a zip lock bag, refrigerated for 6 hours or overnight
- Just before grilling sprinkle with the black pepper
- Grill the chicken turning once for about 12 minutes. Grilled chicken before. Serve with the salsa
- With a fork, mash about 2 tbsp of the nectarine
- Stir in the rest of the nectarine and the rest of the ingredients
- Let sit for 15 minutes and adjust the seasoning.
