INGREDIENTS:
- 3/4 cup freshly squeezed lemon juice
- 3/4 cup olive oil
- 2 tsp salt
- 1 tsp pepper
- 1 tsp dried thyme
- 2 lb boneless chicken breasts, halved and skin removed
STEP BY STEP:
- Whisk together the lemon juice, olive oil, salt and pepper, and thyme
- Pour over the chicken breasts in a glass dish
- Cover with plastic and refrigerate for 6 hours or overnight
- Heat a grill to medium high heat and cook the chicken for about 10 minutes per side, until just cooked through
- Cool slightly and cut diagonally in 1/2-inch thick slices. Stick wooden skewers in the pieces and serve.
