Grilled Lemon Chicken Satays

INGREDIENTS:

  • 3/4 cup freshly squeezed lemon juice
  • 3/4 cup olive oil
  • 2 tsp salt
  • 1 tsp pepper
  • 1 tsp dried thyme
  • 2 lb boneless chicken breasts, halved and skin removed

STEP BY STEP:

  1. Whisk together the lemon juice, olive oil, salt and pepper, and thyme
  2. Pour over the chicken breasts in a glass dish
  3. Cover with plastic and refrigerate for 6 hours or overnight
  4. Heat a grill to medium high heat and cook the chicken for about 10 minutes per side, until just cooked through
  5. Cool slightly and cut diagonally in 1/2-inch thick slices. Stick wooden skewers in the pieces and serve.
