Grilled Tuna Burger With Spicy Mango Ketchup

INGREDIENTS:

  • 2 lb minced fresh tuna
  • 2 tbsp whole grain mustard
  • 2 tbsp capers, minced
  • 1/4 cup cilantro, minced
  • 1/4 cup scallions, minced
  • 1 tbsp chipotle puree
  • spicy mango ketchup

STEP BY STEP:

  1. Prepare a wood or charcoal fire and let it burn down to embers
  2. In a large mixing bowl, combine all ingredients and season to taste with salt and pepper
  3. Refrigerate until ready to use. When ready to use, form into 1 inch thick patties
  4. Brush tuna burgers with olive oil and season with salt and pepper. Grill for 1 minute on each side for rare
  5. Serve on hamburger roll with Spicy Mango Ketchup.
