INGREDIENTS:

  • 8 cup Water; cold
  • 1/3 cup Dark brown sugar; packed
  • 1/2 oz Baking chocolate; fine chop
  • 2 each Cloves; whole
  • 1 each Cinnamon stick; broken in 1/2
  • 1 cup Coffee; regular grind, dry
  • 1 tsp Vanilla
  • 1/4 cup Brandy
  • 8 tbsp Coffee liqueur

STEP BY STEP:

  1. Heat water, brown sugar, chocolate, cloves, and cinnamon to boiling in 3-quart saucepan; reduce heat.
  2. Simmer, uncovered, for 15 minutes.
  3. Stir in coffee.
  4. Remove from heat; cover and let stand 5 minutes.
  5. Stir in vanilla.
  6. Strain coffee through 4 thicknesses of cheesecloth. Keep hot in saucepan after straining.
  7. Heat brandy just until warm in small, long-handled saucepan.
  8. Remove from heat; ignite.
  9. Pour flaming brandy over coffee.
  10. Allow flame to burn out; stir.
  11. Pour coffee into cups or mugs. Top each with whipped cream and 1 tbsp liqueur. Garnish with cinnamon stick, if desired.
