INGREDIENTS:
- 2.7 k (6lb) cooking apples
- 1.8 k (4lb) oranges
- 900 g (2lb) sugar
- 1 tsp yeast
STEP BY STEP:
- Wash and core the apples and chop into small pieces. Wash the oranges, cut them in half, and extract the juice, using a citrus fruit juicer.
- Remove the orange peel and scrape off any white pith from the inside.
- Chop up the peel and mix it with the orange juice and apple chunks in a plastic bowl. Cover with warm water and stir in half the sugar.
- Add the yeast, cover the bowl with a cloth, and ferment on the pulp for 4 days. then strain into a jar, mix in the rest of the sugar, and top up with water.
- Ferment under airlock, and then rack and bottle in the usual way.
