Apple And Orange Wine

INGREDIENTS:

  • 2.7 k (6lb) cooking apples
  • 1.8 k (4lb) oranges
  • 900 g (2lb) sugar
  • 1 tsp yeast

STEP BY STEP:

  1. Wash and core the apples and chop into small pieces. Wash the oranges, cut them in half, and extract the juice, using a citrus fruit juicer.
  2. Remove the orange peel and scrape off any white pith from the inside.
  3. Chop up the peel and mix it with the orange juice and apple chunks in a plastic bowl. Cover with warm water and stir in half the sugar.
  4. Add the yeast, cover the bowl with a cloth, and ferment on the pulp for 4 days. then strain into a jar, mix in the rest of the sugar, and top up with water.
  5. Ferment under airlock, and then rack and bottle in the usual way.
