INGREDIENTS:
- 150 ml white grape concentrate
- 2 litres apple juice
- 1 k sugar
- 1 level teaspoon citric acid
- 1 tsp nutrient
- yeast
- water to 1 gallon
- campden tablets
STEP BY STEP:
- Boil sugar with 1 litre of the water. Cool.
- Pour apple juice into 1 gallon glass demijohn, add half the sugar syrup and all other ingredients except yeast.
- Start yeast in 100mls warm water, and when bubbling, add to demijohn. Top up to turn of shoulder with water.
- Ferment 2 weeks. Rack and add remaining sugar. Ferment on until fermentation has ceased.
- Add 2 crushed Campden tablets and bottle 24 hours later.
