INGREDIENTS:
- 2-4 k cranberries
- 2 k sugar
- 1 campden tablet
- 1/2 tsp yeast nutrient
- burgundy yeast
- water to 1 gallon
STEP BY STEP:
- Wash the fruit then pour sufficient boiling water over it to cover, mash, add the sugar and stir to dissolve.
- Make up to volume with cold water and add the nutrient, Campden tablet and yeast.
- Ferment on the pulp for a few days then strain and ferment on.
