Breakfast Cocoa

INGREDIENTS:

  • 1 cup scalded milk
  • 1 cup boiling water
  • 1 1/2 tbsp sugar
  • 2 tbsp cocoa

STEP BY STEP:

Mix cocoa and sugar. Add boiling water, boil for a few minutes, then pour in scalded milk. Beat well and serve.

Baked Oatmeal

INGREDIENTS:

  • 1/4 cup cooking oil
  • 1/4 cup brown sugar
  • 2 eggs
  • 3 cups old fashioned oats
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cup milk
  • 1 tsp cinnamon
  • 16 oz canned fruits, drained

STEP BY STEP:

  1. Cream oil, sugar and eggs together. Add remaining ingredients and mix. Pour into greased 8 x 11 inch glass baking dish
  2. Add canned or sliced fresh fruit such as peaches, apples, or raisins
  3. Mix with all the other ingredients and bake at 350 degrees F for 30 minutes. Serve with milk and brown sugar.

Hamburger

INGREDIENTS:

  • 3/4 cup rice flour
  • 1/4 cup potato starch
  • 1/2 cup tapioca starch
  • 2 tsp baking powder
  • 1/2 tsp xanthan gum
  • 1/2 tsp salt
  • 1 tbsp sugar
  • 2 eggs
  • 1/3 cup oil
  • 1/2 cup milk

STEP BY STEP:

  1. Preheat oven to 400 degrees F. Mix above ingredients. In a separate bowl mix eggs, oil, milk
  2. Mix wet ingredients with dry ingredients. Spray cookie sheet with pam and then spray inside of muffin rings
  3. Put 2 very large spoonfuls of batter in each, make sure the rings aren’t to close to each other
  4. Sprinkle with sesame seeds. and bake immediately for approx. 13-15 minutes, should get nice and golden brown on top
  5. Should get 5 buns out of it. You can double the recipe and make a bigger batch, if you use them often. Don’t undercook or they will fall when cooling. Take out of muffin rings and let cool completely.

TIPS:

Variation: Add 1 cup grated cheddar cheese for a lovely cheese bun. For hot dogs: add 1/4 – 1/2 teaspoon more of the xanthan gum to the batter, and on greased cookie sheet, spoon batter in an oblong shape, about 5 inches long, sprinkle sesame seeds, and bake immediately. Let cool completely, wrap individually in saran wrap, and place in a freezer bag and freeze. Take out whenever you need one. When their thawed usually microwave one for about 15-20 seconds, not to much, just to warm them up.

Chicken with Garlic & Parsley

INGREDIENTS:

  • 8 each Garlic cloves
  • 1 each Chicken ; halved, deboned
  • 2 tbsp Parsley, finely chopped
  • 2 tbsp Unsalted butter
  • 1/2 each Lemon juice
  • Salt
  • Freshly ground pepper

STEP BY STEP:

  1. Prepare charcoal grill.
  2. Place unpeeled garlic cloves in pan of cold water. Bring gradually to boil, lower heat, simmer 3-4 min. Drain. Peel & finely slice.
  3. Combine garlic with parsley.
  4. Stuff half this mixture under the skin of both chicken halves. Season with salt & pepper.
  5. Place seasoned chicken over hot charcoal & grill about 5 min. on each side, or until just tender.
  6. Meanwhile, melt the butter in a small skillet & saute remaining garlic-parsley mixture with lemon juice until warmed through; do not brown.
  7. Arrange grilled chicken on serving platter, top with garlic-parsley sauce, and serve immediately.
