Cream Of Mushroom Sauce

INGREDIENTS:

  • 1 tbsp margarine
  • 1/4 lb diced fresh mushrooms
  • 4 tbsp margarine
  • 1/2 cup evaporated milk
  • 1/2 cup low fat milk

    Stir in these spices:

  • 1/2 tsp dried onion flakes
  • 1 pinch celery seed
  • 1 pinch garlic powder
  • 1/4 tsp salt
  • 1/8 tsp pepper

    Paste:

  • 2 1/2 tbsp sweet rice flour
  • 1/4 cup milk

STEP BY STEP:

  1. In heavy saucepan, heat on medium: Saute margarin for 1 minunte
  2. Add the fresh mushrooms for antoher 1 minute
  3. Remove from pan and reserve. Heat, in same saucepan: Margarine, evaporated milk, milk
  4. Stir in these spices: Onion flakes, celery seed, garlic powder, salt and pepper
  5. Make a smooth paste of sweet rice flour and milk. Add paste slowly to heating mixture
  6. Stir constantly until thickened. Stir in reserved mushrooms and heat through
  7. Use in casserole recipes or add 1 cup milk of soup. Equivalent to one can condensed cream of mushroom soup.

TIPS:

For variation: Substitute 1 cup diced celery for fresh mushrooms or substitute 1 cup diced raw chicken for fresh mushrooms and sauté for 3 min
