INGREDIENTS:

  • 4 small kohlrabies, peeled and cut into chunks
  • 1/2 cup couscous or bulgar wheat
  • 1 lg onion, chopped
  • 1/4 cup raisins, dark or golden
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground cumin
  • 15 oz garbanzo beans
  • 3 cup water
  • 2 sweet potatoes, peeled and cut into chunks
  • 2 zucchini, sliced thick
  • 5 tomatoes, fresh

STEP BY STEP:

  1. Combine all the ingredients in a large saucepan
  2. Bring to a boil, lower the heat, and simmer until the vegetables are tender, about 30 minutes
  3. Serve the couscous separately, if desired. Parsnips may be substituted for the kohlrabi.
