INGREDIENTS:
- 350 gram chick peas, soaked overnight
- 1 tbsp fresh parsley, chopped
- 1 1/2 tsp fresh tarragon, chopped
- 4 spring onions, chopped
- Spring onion slices for garnishing
- Parsley leaves for garnishing.
For the dressing :
- 2 clove garlic, finely chopped
- 1 tbsp red wine vinegar
- 2-3 tbsp mustard
- 4 tbsp olive oil
- Black pepper, ground as required
- Salt as required
STEP BY STEP:
- Drain and rinse the chick peas, put in a saucepan and cover with cold water
- Bring to a boil, cover the pan and simmer for 1½ hours, until the peas are tender
- Mix together garlic, vinegar, mustard, salt and pepper
- Slowly pour in the olive oil and whisk constantly
- Drain the chick peas and immediately toss with the dressing, parsley, tarragon and spring onions
- Garnish with spring onion slices and parsley.
