French Onion Soup

INGREDIENTS:

  • 16 oz canned campbells french onion soup
  • 4 quart water
  • 16 oz can potatoes
  • 2 lb bag onions
  • 4 tbsp parsley flakes
  • 1 tbsp pepper
  • 1/2 tsp lemon extract
  • 2 bay leaves
  • 4 tbsp margarine
  • 16 oz mozzarella, finely shredded
  • 1 pkg tuscany toast, or french bread

STEP BY STEP:

  1. Peel and slice all onions
  2. Put can of potatoes, including water, into blender and blend until smooth
  3. Put Campbell's, water, parsley flakes, pepper, lemon extract and bay leaves into a large pot. Bring to a boil, then reduce heat and simmer
  4. While bringing the broth to a boil, melt margarine in large frying pan on medium heat. Add onions
  5. Fry until golden brown. Add more margarine or vegetable oil if necessary
  6. Add onions to broth. Simmer 2 hours
  7. Serve hot in medium bowl with 1-1/2tablespoons cheese and 2 slices tuscany toast, or french bread, to taste.
