INGREDIENTS:
- 16 oz canned campbells french onion soup
- 4 quart water
- 16 oz can potatoes
- 2 lb bag onions
- 4 tbsp parsley flakes
- 1 tbsp pepper
- 1/2 tsp lemon extract
- 2 bay leaves
- 4 tbsp margarine
- 16 oz mozzarella, finely shredded
- 1 pkg tuscany toast, or french bread
STEP BY STEP:
- Peel and slice all onions
- Put can of potatoes, including water, into blender and blend until smooth
- Put Campbell's, water, parsley flakes, pepper, lemon extract and bay leaves
into a large pot. Bring to a boil, then reduce heat and simmer
- While bringing the broth to a boil, melt margarine in large frying pan
on medium heat. Add onions
- Fry until golden brown. Add more margarine or vegetable oil if necessary
- Add onions to broth. Simmer 2 hours
- Serve hot in medium bowl with 1-1/2tablespoons cheese and 2 slices tuscany toast, or french bread, to taste.
