INGREDIENTS:
- 4 ounce ham slices
- 2 clove garlic, chopped
- 1 1/2 lb tomatoes, seeded & chopped
- 1 1/2 tbsp olive oil
- 6-8 ea eggs, beaten
- Pepper, ground as required
- Onions, chopped
- Green capsicum, finely sliced
- Red capsicum, finely sliced
- Parsley, chopped as required
- Salt as required
STEP BY STEP:
- Remove the extra fat from the ham, chop and sauté in a pan till it melts
- Then add the chopped garlic, onions and sauté until it turns soft
- Next add the sliced green and red pepper along with the chopped tomatoes, pepper and salt
- Simmer over a low flame, then remove half of the vegetables and keep them aside
- Stir in the beaten eggs with the remaining vegetables in the pan and cook over a low flame
- Grill the ham slightly and arrange in a plate
- As soon as the egg starts to thicken, remove and serve in the plate with the grilled ham
- Lastly, top it with the reserved mixed vegetables and garnish with chopped parsley.
