INGREDIENTS:
- 1/2 ea small red onion, thinly sliced
- 1 6" x 8" focaccia (15 cm. x 20 cm.)
- 3-4 tbsp olive tapenade
- 9-12 slice tomato
- 9-12 slice english cucumber
- 3-4 ea large lettuce leaves, not iceberg lettuce
- 2 oz feta
- 2 tsp mince fresh oregano
- 1 tbsp red wine or balsamic vinegar
- 2 tbsp olive oil
- salt and pepper
STEP BY STEP:
- Soak the red onions in cold water for ½ an hour, then drain
- Slice the Focaccia horizontally. Spread the tapenade over the bottom piece, then cover with lettuce, tomatoes, feta cheese, cucumber and red onion
- Sprinkle with salt pepper and oregano or mix vinegar and olive oil, and put into a side container
- Wrap, and transport the sandwich to your picnic whole, then take off the top slice of focaccia and drizzle the sandwich with the oil and vinegar mixture
- Replace the bread, and cut the sandwich into 3 or 4 pieces.
