INGREDIENTS:

  • 1 cup corn meal
  • 1/3 cup wheat flour
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 cup raisins
  • 1/2 tsp soda
  • 1 quart hot milk
  • 1 cup cold milk
  • 1/2 cup molasses
  • 1/2 cup maple syrup
  • 1 cup chopped suet
  • 2 eggs

STEP BY STEP:

  1. Mix the corn meal with the cold milk and stir into the hot milk
  2. Add the suet, molasses, and maple syrup
  3. Beat the eggs until light and add to mixture
  4. Then sift the wheat flour with the soda, spices and salt, mix with raisins, add to mixture and stir all well
  5. Pour into a buttered mold. Cover tight and steam or cook in boiling watre 4 hours
  6. Serve with sauce, cream or maple syrup. The pudding leftovers may be heted over in the oven.

TIPS:

Suet s solid white fat found around some meats.
