INGREDIENTS:
- 1 cup corn meal
- 1/3 cup wheat flour
- 1 tsp cinnamon
- 1/2 tsp cloves
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 cup raisins
- 1/2 tsp soda
- 1 quart hot milk
- 1 cup cold milk
- 1/2 cup molasses
- 1/2 cup maple syrup
- 1 cup chopped suet
- 2 eggs
STEP BY STEP:
- Mix the corn meal with the cold milk and stir into the hot milk
- Add the suet, molasses, and maple syrup
- Beat the eggs until light and add to mixture
- Then sift the wheat flour with the soda, spices and salt, mix with raisins, add to mixture and stir all well
- Pour into a buttered mold. Cover tight and steam or cook in boiling watre 4 hours
- Serve with sauce, cream or maple syrup. The pudding leftovers may be heted over in the oven.

Suet s solid white fat found around some meats.
