Cucumber Salad With Scallions

INGREDIENTS:

  • 100 gram carrots
  • 100 gram green beans
  • 4 ea scallions
  • 100 gram white cabbage
  • 2 ea toes of garlic
  • 1/4 ea cucumber
  • 1 tbsp oil
  • 150 ml vinegar
  • 100 gram bean sprouts/shoots
  • 1 tbsp sugar
  • 1 tsp powdered ginger
  • 1 tsp kunjit/kurkuma
  • 1 tsp sambal ulek
  • salt

STEP BY STEP:

  1. Cut carrot, beans, and cabbage into the size of matches, and cucumber in small cubes
  2. In a pan with a little water and salt, boil the vegetables for 5 minutes.
  3. Drain. Peel scallions and garlic, make a paste using a mortar or blender, set aside
  4. Mix with sambal, kunjit and ginger
  5. Heat oil in a frying pan. Fry the herb-mixture for 2 minutes
  6. Add vinegar and sugar, stir to dissolve sugar
  7. Add all vegetables, add some water if there is a little water
  8. Boil softly for 2 minutes. Put in a bowl and let cool.

TIPS:

Sterilized on a lid jar with the liquid as well. Can be kept for at least a year in a dark/cool place
