INGREDIENTS:

  • 4 cup long grain rice
  • 8 ea shallots or 1 small onion
  • 4 ea red chillis
  • 2 tsp paprika
  • 4 tbsp vegetable oil
  • 2 tsp sweet soya sauce
  • 2 tsp tomato ketchup
  • salt and sugar to taste

STEP BY STEP:

  1. Prepare cooked rice a few hours before or use cool rice to get best taste
  2. Blend shallots, onion, seed and slice the chilli in a mortar, add sugar and salt. Side aside
  3. Heat the oil in a wok. Saute the mixture, then add soya sauce, and tomato ketchup
  4. Put in all the rice, and stir it continuously until it is well heated: this will take 5 to 8 minutes
  5. Serve in a good large dish, generously garnished with sliced cucumber, tomatoes, fried onions, and serve with krupuk or shrimps crackers.

TIPS:

You also can put one or two fried eggs with sunny or scramble style. For fresh Indonesian style you can eat with cucumber pickled.
