INGREDIENTS:

  • 3 lb chicken
  • 1 cup sweet soy sauce
  • 2 clove garlic, peeled and mashed
  • 2 tbsp fresh lime juice
  • 1/2 cup unsalted butter, melted
  • 1/2 tsp grated fresh ginger
  • 1 tsp sambal oelek
  • 1 pkg shrimps crackers
  • Cornstarch to thicken, marinade for sauce

STEP BY STEP:

  1. Cut chicken into 8 pieces. Combine remaining ingredients, except shrimp puffs, in large bowl
  2. Add chicken pieces; toss to coat
  3. Marinate 2 hours at room temperature, stirring occasionally
  4. Remove chicken pieces from marinade
  5. Save some of the marinade for basting and the sauce
  6. Roast, uncovered, at 400 F. for 35 to 40 minutes or until done, basting as needed
  7. If browning too quickly, cover with foil
  8. Heat reserved marinade with cornstarch until thickened and serve as sauce, if desired
  9. Serve with shrimp puffs on the side.
  10. For these, simply deep-fry in hot fat or oil about 375 F. on fat, draining at once on paper towels.
  11. Serve with fresh tomatoes and fried rice
