INGREDIENTS:

  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 egg yolk, reserve remaining egg white
  • 1 tbsp anise seeds
  • 2 tsp grated lemon peel
  • 2 tsp grated orange peel
  • 3 cup all purpose flour
  • 1/3 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup chopped walnuts
  • 1 cup raisins

STEP BY STEP:

  1. Heat oven to 350 degrees F. Grease a cookie sheet
  2. Combine butter, sugar and 2 eggs plus 1 egg yolk, beat until light and fluffy
  3. Stir in anise seeds, lemon peel and orange peel
  4. Combine flour, baking powder and baking soda. Stir into butter mixture, mix well
  5. Stir in walnuts and raisins. Divide dough in half
  6. Shape each half into 12-inch roll. Place rolls on greased cookie sheet, allowing space in between for spreading
  7. Press tops of rolls to flatten slightly. Slightly beat egg white, brush over rolls
  8. Bake in upper third of oven at 350 degrees for 30 minutes, or until lightly browned
  9. Remove from oven. Reduce temperature to 325 degrees F
  10. Using a sharp knife, cut rools diagonally into 1/2 inch slices
  11. Place slices, cut side down, on cookie sheet. Return to oven and bake at 325 derees F for an additional 10 to 12 minutes or until almost dry. Cool on wire racks.
