INGREDIENTS:
- 3 cup cubed zucchini
- 4 slices bacon
- 3 ea ripe tomatos
- 4 ea slices velveeta cheese
- 1 small green pepper, chopped
- 1 ea onion, sliced
- 1/4 cup rice
- 1 tsp sugar
- salt and pepper to taste
STEP BY STEP:
- Chop bacon and fry, then drain off grease
- Layer in casserole dish, zucchini, green pepper, onion, bacon, rice, tomato, and cheese
- In that order. Bake at 350 degrees F for 1 1/2 hours.
