INGREDIENTS:

  • 1/4 cup pickled ginger
  • 1/4 cup rice wine vinegar
  • 1/2 tsp wasabi powder
  • 1/4 cup mirin
  • 1/3 cup vegetable oil
  • 12 oz tins packed tuna, rinsed and drained
  • 2 ea green onions, chopped
  • 1 tbsp black sesame seeds
  • 8 slice ciabatta or 4 ciabatta rolls
  • 1 ea avocado, sliced
  • 1/2 cup pea sprouts
  • salt and pepper

STEP BY STEP:

  1. Place ginger, reserving 1 tbsp, vinegar, wasabi powder, and mirin in a blender or food processor. Blend on high, while slowly dribbling in oil
  2. In a bowl, mix 1/4 cup of the vinaigrette with the tuna. Add the green onion, the sesame seeds and the reserved, finely chopped pickled ginger, mixing until combined
  3. Season with salt and pepper. Place the tuna on bread. Top with avocado, pea sprouts and the remaining bread or roll.

TIPS:

The vinaigrette will keep in the fridge for 1 week.
