Mahimahi Stir-Fry With Black Beans

INGREDIENTS:

  • 3 pcs 2-3 oz Mahimahi
  • 2 tbsp salad oil pinch salt & pepper
  • 1 tbsp flour
  • 1 cup mixed stir-fry vegetables
  • 1 tbsp ginger, minced
  • 1 tbsp garlic, minced
  • 2 tbsp black beans, fermented
  • 1 tbsp sugar
  • 2 cup chicken stock
  • 1 tbsp cornstarch mixed with 1 tbsp water for thickening
  • for garnish curled carrot & beet for garnish ogo

STEP BY STEP:

  1. Heat oil in wok. Season mahimahi with salt and pepper then dust with flour
  2. Saute in hot oil about 1 minute on each side
  3. Add vegetables, ginger, garlic, black beans, sugar and chicken broth
  4. Cook about 2 more minutes and remove fish
  5. Continue to cook about 2 minutes more or until vegetables are just cooked
  6. Thicken with cornstarch
  7. Place 1 piece of Mahimahi on plate
  8. Top with 1/2 of the vegetables. Place another piece of mahimahi on top of the vegetables
  9. Place remainder of vegetables on top, then top with the last piece of Mahimahi
  10. Pour sauce over and garnish with carrots, beets, and ogo.
