INGREDIENTS:
- 3 pcs 2-3 oz Mahimahi
- 2 tbsp salad oil pinch salt & pepper
- 1 tbsp flour
- 1 cup mixed stir-fry vegetables
- 1 tbsp ginger, minced
- 1 tbsp garlic, minced
- 2 tbsp black beans, fermented
- 1 tbsp sugar
- 2 cup chicken stock
- 1 tbsp cornstarch mixed with 1 tbsp water for thickening
- for garnish curled carrot & beet for garnish ogo
STEP BY STEP:
- Heat oil in wok. Season mahimahi with salt and pepper then dust with flour
- Saute in hot oil about 1 minute on each side
- Add vegetables, ginger, garlic, black beans, sugar and chicken broth
- Cook about 2 more minutes and remove fish
- Continue to cook about 2 minutes more or until vegetables are just cooked
- Thicken with cornstarch
- Place 1 piece of Mahimahi on plate
- Top with 1/2 of the vegetables. Place another piece of mahimahi on top of the vegetables
- Place remainder of vegetables on top, then top with the last piece of Mahimahi
- Pour sauce over and garnish with carrots, beets, and ogo.
