INGREDIENTS:
- 2 whole chicken legs
- 1 tbsp preserved salted black beans
- 1 tbsp oyster sauce
- 1 tbsp chopped onion
- 2 stalks green onion, chopped
- 1 tbsp minced ginger root
- 2 tbsp soy sauce
- 1/2 tsp salt
- 1 tbsp cooking wine
- 1 cup oil
STEP BY STEP:
- Soak black beans in water for 15 minutes, cut chicken legs into bite-sized pieces. Add soy sauce, cooking wine onions ad chopped ginger to chicken and allow the mixture to marinate
- Heat oil. Add chicken pieces, several at a time, and deep fry for 5 minutes. Remove from oil
- In another pan, bring 1cup of water, drained black beans, chicken marinade and oyster sauce to boil. Add chicken pieces and simmer on medium heat for about 20 minutes
- Remove chicken, evaporate some of the sauce by cooking over high heat, add chopped green onions and then pour over chicken to serve.
