Chickpea And Sesame Dip

INGREDIENTS:

  • 4 oz chickpeas, soaked for a few hours
  • 3 tbsp tahina
  • 2 clove garlic, crushed
  • 1 tsp paprika
  • 2 lemons, juiced
  • a few sprigs of parsley, finely chopped
  • salt to taste

STEP BY STEP:

  1. Drain the chickpeas and simmer in fresh water for about an hour or until tender
  2. Reserve the cooking water juice of 2 lemons
  3. Process the chickpeas in a food processor with the lemon juice, tahina, garlic, salt and enough of the cooking liquid to obtain a soft creamy consistency
  4. Serve on a flat plate, garnished with a dribble of olive oil, a dusting of paprika and a little parsley. Serve with warm pita bread for dipping.
