Spicy Sausage In Mexican Beer Sauce

INGREDIENTS:

  • 4-6 fresh corn tortillas
  • 2 1/2 tsp dark mexican beer
  • 1/4 cup water
  • 2 tsp taco seasoning
  • 8 oz spicy pork sausage meat
  • 1 lb cheddar cheese, shredded

STEP BY STEP:

  1. Place the sausage meat, beer and taco seasoning in a bowl. Knead together to mix well
  2. Cover and refrigerate for two hours to let the flavors develop
  3. In a sauté pan over low heat, crumble the pork mixture. Add the water and sauté until tender, about 30 minutes. Drain and set aside
  4. Preheat the broiler
  5. Divide the mixture evenly among 4 individual gratin dishes
  6. Top with the shredded cheese and broil until golden brown and bubbly
  7. Serve immediately with hot corn tortillas.
