Hummus Bi Tahini

INGREDIENTS:

  • 1 clove garlic
  • 2 cup well cooked garbanzo beans
  • 3-4 tbsp cold water
  • 1/4 cup sesame tahini
  • 1/2 tsp salt
  • 1 tbsp olive oil
  • juice of 1 lemon
  • dash cayenne pepper, optional
  • fresh coriander for garnish
  • crushed red pepper, optional

STEP BY STEP:

  1. Add garlic to work bowl and process until finely minced. Add garbanzo beans, lemon juice, water, tahini and salt
  2. Process until smooth, scraping down the sides of the bowl with a spatula as needed
  3. Taste and adjust seasoning. Spread hummus in a shallow dish
  4. Dribble on olive oil, place a pinch of crushed red pepper in the center and garnish with coriander.
