Lentil Stuffed Peppers

INGREDIENTS:

  • 2/3 cup red lentils
  • 1" piece ginger, grated
  • 4 tbsp vegetable oil
  • 1 tbsp ground coriander
  • 1 1/4 cup water
  • 1 tsp cumin seeds
  • 2 tbsp chopped cilantro
  • 2 green chilies
  • 2 onions, chopped
  • 4 medium green bell peppers
  • salt & pepper

STEP BY STEP:

  1. Rinse lentils & soak for 30 minutes. Heat half oil in skillet
  2. Add peppers & cook for 3 to 5 minutes till golden brown. Drain & cool
  3. Add remaining oil to pan. Cook cumin till they begin to pop
  4. Add onions & chilies & cook for 8 minutes. Stir in ginger & coriander
  5. Drain lentils add to the pan with water. Stir well & cover
  6. Cook for 15 to 20 minutes until the liquid has evaporated. Stir in salt & pepper. Add cilantro
  7. Cut tops off peppers & remove seeds. Stuff with the lentils & replace the tops. Stand in a baking dish. Bake at 350 degree F for 15 minutes.
