INGREDIENTS:

  • 1/3 cup white sugar
  • 1/2 tsp cinnamon
  • 1/4 cup brown sugar
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/8 tsp ginger
  • 1 tbsp flour
  • 1 tbsp butter
  • 2 tsp lemon juice
  • 6 cup peeled apples, cut in 1 inch -wedges

STEP BY STEP:

  1. Sprinkle apple wedges with lemon juice and toss well. Combine remaining ingredients except butter, cream and sauce. Line a 9 inch pie plate with half the pastry and sprinkle bottom with 1/3 of the sugar spice mix.
  2. Top with half the apple wedges, fitting them in as tightly as possible. Sprinkle with another third of the sugar spice mix. Top with the rest of apples and sprinkle with remaining sugar spice mix. Press gently with your hand, to make it as compact as possible. Dot with butter, and top with remaining pastry. Brush top with cream or milk.
  3. Bake in a 425 F oven 15 minutes. Reduce heat to 350 F and bake 40-45 minutes, or until crust is golden brown.
