INGREDIENTS:
- 1 lb shelled shrimp
- 1 lb broccoli, cut into small florets
- 1 tsp chopped green onion
- 1 tsp minced ginger root
- 1/2 tsp salt
- 1 tsp cooking wine
- 1 tsp cornstarch
- 4 tsp oil
STEP BY STEP:
- Slit the backs of the shrimp so they will become circular when cooked. Mix ginger, green onion, cooking wine and cornstarch together with shelled shrimp
- Heat 3 t. oil. Stir-fry shrimp over high heat until almost cooked through. Remove from oil
- Add one more t. oil and stir fry broccoli over high heat for 1 minutes to retain bright green color
- Add 1/4 to 1/2 cup of water, allow to simmer briefly and then add shrimp. Season with salt.
