Stir Fried Shrimp And Broccoli

INGREDIENTS:

  • 1 lb shelled shrimp
  • 1 lb broccoli, cut into small florets
  • 1 tsp chopped green onion
  • 1 tsp minced ginger root
  • 1/2 tsp salt
  • 1 tsp cooking wine
  • 1 tsp cornstarch
  • 4 tsp oil

STEP BY STEP:

  1. Slit the backs of the shrimp so they will become circular when cooked. Mix ginger, green onion, cooking wine and cornstarch together with shelled shrimp
  2. Heat 3 t. oil. Stir-fry shrimp over high heat until almost cooked through. Remove from oil
  3. Add one more t. oil and stir fry broccoli over high heat for 1 minutes to retain bright green color
  4. Add 1/4 to 1/2 cup of water, allow to simmer briefly and then add shrimp. Season with salt.
