INGREDIENTS:

  • 1/2 cup chopped onions
  • 1/2 tsp salt
  • 14 oz tuna
  • 3 tbsp olive oil
  • 2 tbsp tomato paste
  • 2 cups dried, cooked, black-eyed peas
  • 2 tsp hot red crushed pepper
  • 1 large chopped tomato

STEP BY STEP:

  1. Preheat an oven to 350 degrees F
  2. Sauté 1/2 cup of chopped onions, in 3 tablespoons of olive oil. Transfer to baking dish
  3. Pour this mixture over 2 cups of dried, cooked, black-eyed peas
  4. Combine with 1 large chopped tomato, 2 teaspoons of hot red crushed pepper
  5. Bake this mixture for 10 minutes. Then add, 1/2 teaspoon salt, 14 ounces of tuna, 2 tablespoons of tomato paste
  6. Cover the dish, and bake for 15 minutes. Uncover the dish and add bread crumbs. Serve with bananas.
