INGREDIENTS:
- 1/2 cup chopped onions
- 1/2 tsp salt
- 14 oz tuna
- 3 tbsp olive oil
- 2 tbsp tomato paste
- 2 cups dried, cooked, black-eyed peas
- 2 tsp hot red crushed pepper
- 1 large chopped tomato
STEP BY STEP:
- Preheat an oven to 350 degrees F
- Sauté 1/2 cup of chopped onions, in 3 tablespoons of olive oil. Transfer to baking dish
- Pour this mixture over 2 cups of dried, cooked, black-eyed peas
- Combine with 1 large chopped tomato, 2 teaspoons of hot red crushed pepper
- Bake this mixture for 10 minutes. Then add, 1/2 teaspoon salt, 14 ounces of tuna, 2 tablespoons of tomato paste
- Cover the dish, and bake for 15 minutes. Uncover the dish and add bread crumbs. Serve with bananas.
