INGREDIENTS:

  • 1/2 onion
  • 3 slices fat free bacon
  • 1 tbsp garlic
  • 2 tbsp cumin
  • 1 tbsp olive oil
  • 1-2 tbsp butter

STEP BY STEP:

  1. Chop onion and bacon into small pieces
  2. Sprinkle garlic, cumin over onion and bacon and sauté for 1-2 minutes on high in 1 tbsp of olive oil
  3. Remove from heat and add 1-2 tbsp of butter to melt over top
  4. Mash the potatoes with 1/2-1/4 cup of plain rice milk and 3 slices of veggie slices pepper jack cheese
  5. Add 2 tbsp Dijon Mustard, add the onion mixture. Mash together
  6. Put into casserole dish and bake for 30 minutes (same 375 degree F oven). Serve.
