INGREDIENTS:
- 1/2 onion
- 3 slices fat free bacon
- 1 tbsp garlic
- 2 tbsp cumin
- 1 tbsp olive oil
- 1-2 tbsp butter
STEP BY STEP:
- Chop onion and bacon into small pieces
- Sprinkle garlic, cumin over onion and bacon and sauté for 1-2 minutes on high in 1 tbsp of olive oil
- Remove from heat and add 1-2 tbsp of butter to melt over top
- Mash the potatoes with 1/2-1/4 cup of plain rice milk and 3 slices of veggie slices pepper jack cheese
- Add 2 tbsp Dijon Mustard, add the onion mixture. Mash together
- Put into casserole dish and bake for 30 minutes (same 375 degree F oven). Serve.
