Apple Tuna Pasta Casserole

INGREDIENTS:

  • 1 1/2 cup skim milk
  • 1/8 cup all purpose flour
  • 1/2 cup bread crumbs, soft
  • 1/4 tsp salt
  • 3 tbsp butter or margarine
  • 1 tbsp butter or margarine, melted
  • 1 cup macaroni
  • 1 cup monterey jack cheese, shredded
  • 1 cup tuna in water, drained
  • 1 cup tart apples, peeled cored, and diced
  • white pepper, to taste

STEP BY STEP:

  1. Cook macaroni according to package directions; drain. In a saucepan, melt 3 tablespoons butter or margarine over low heat. Blend in flour and salt
  2. Add milk all at once. Cook quickly, stirring constantly, until mixture thickens and bubbles. Add cheese; stir until cheese is melted
  3. Stir in tuna, diced apples and drained macaroni; turn into a baking dish
  4. Combine 1 tablespoon melted butter and crumbs. Sprinkle on top of casserole. Bake in 350 degree oven for 30 minutes, or until apples are tender.
