Wild Rice and Saskatoon Berry Tarts

INGREDIENTS:

  • 24 - 3" sweet tart shells
  • 1 lemon, juice and zest
  • 5 ml ground nutmeg
  • 20 ml Brandy
  • 125 ml cottage cheese
  • 115 gr butter, soft
  • 100 gr granulated white sugar
  • 90 gr Saskatoon berries
  • 80 gr wild rice, cooked

STEP BY STEP:

  1. Place prepared tart shells on a baking sheet.
  2. Preheat oven to 365°F.
  3. Using a food processor, blend cottage cheese with butter until well-mixed.
  4. Add sugar, lemon juice and zest, wild rice, nutmeg and brandy. Mix thoroughly.
  5. Stir in Saskatoon berries. Spoon batter into tart shells.
  6. Bake until golden brown, approximately 10-12minutes.
