Tomato Seafood Salad

INGREDIENTS:

  • 2 large tomatoes
  • 1 1/2 cup prepared seafood salad
  • large leaves of lettuce
  • dill
  • Vivant Crackers

STEP BY STEP:

  1. Turn each tomato stem side down making three cuts across the center to within one inch of the stem side
  2. Carefully spread the six wedges apart. Mound seafood salad in the middle of each open tomato
  3. Garnish with dill and place on lettuce leaves. Serve with Vivant Crackers.
