Shrimp Stew

INGREDIENTS:

  • 2 pounds shrimp
  • 12 oz water
  • 1 medium piece salt pork
  • 1 medium onion, diced
  • salt and pepper to taste
  • flour, as needed
  • rice or grits, cooked

STEP BY STEP:

  1. Boil shrimp with the heads on for no more than three minutes. Dehead, peel, and devein shrimp. Dust the shrimp with flour and set aside
  2. Boil salt pork in water for 15 to 20 minutes. Pour off the salty water
  3. Cut pork into bite size pieces and fry with a pat of butter on a skillet
  4. Fry till crisp and set aside
  5. Fry onion in skillet and set aside. Transfer floured shrimp to the skillet and brown in drippings already in the skillet
  6. Add butter if needed. Fry for about five minutes or until brown. Stir in onions and pork
  7. Add 12 ounces of water. Cover and simmer for 15 to 20 minutes. Serve over rice or grits.
