INGREDIENTS:
- 2 pounds shrimp
- 12 oz water
- 1 medium piece salt pork
- 1 medium onion, diced
- salt and pepper to taste
- flour, as needed
- rice or grits, cooked
STEP BY STEP:
- Boil shrimp with the heads on for no more than three minutes. Dehead, peel, and devein shrimp. Dust the shrimp with flour and set aside
- Boil salt pork in water for 15 to 20 minutes. Pour off the salty water
- Cut pork into bite size pieces and fry with a pat of butter on a skillet
- Fry till crisp and set aside
- Fry onion in skillet and set aside. Transfer floured shrimp to the skillet and brown in drippings already in the skillet
- Add butter if needed. Fry for about five minutes or until brown. Stir in onions and pork
- Add 12 ounces of water. Cover and simmer for 15 to 20 minutes. Serve over rice or grits.
