INGREDIENTS:
- 2 lbs conch meat
- 1/2 cup white wine vinegar
- 3 tbsp butter
- 1 tbsp Maggie eseasoning
- 1/2 cup water
- 1 onion finely chopped
- 1 onion finely chopped
- 2 tomatoes
- 2 chicken boullion cubes
- hot sauce
STEP BY STEP:
- Clean, peel and pound well 2 lbs of conch meat. Rub meat with ˝ cup white wine vinegar
- Cut the conch into bite size pieces and hold on the side
- Sauté in three tablespoons of butter with finely chopped onion and green pepper
- Add 2 tomatoes, peeled and chopped and 2 chicken bouillon cubes. Dissolved in 1/2 cup of water
- Add dash of hot sauce or minced hot pepper. Add 1 tbsp Maggie seasoning.
Simmer the stew about 20 minutes
- Add conch, cover and continue to cook until meat is tender, about 10 minutes. Season to taste.
