Creamy Low Fat Shrimp Fettuccine

INGREDIENTS:

  • 1/2 lb medium shrimp, peeled and deveine
  • 1 clove garlic, minced
  • 1 tbsp fat free chicken broth
  • 14 1/2 oz chunky stewed tomatoes
  • 1/2 cup evaporated skim milk
  • 3/4 cup chopped green onions
  • 1/4 cup fat free parmesan cheese
  • 2 tbsp flour
  • 4 oz fettuccine noodles cooked
  • 1/4 tsp red pepper optional

STEP BY STEP:

  1. Sauté shrimp and garlic in chicken broth, until shrimp are pink
  2. Stir in tomatoes and simmer for 5 minutes. Blend in skim milk, flour and green onions. Add red pepper. Sprinkle in Parmesan cheese.
  3. Heat until smooth and blended. Do Not Boil. Serve over cooked fettuccine.
